Oven Roasted Celery Root

Celery root has a consistency somewhat like a potato, but the flavor is light and fresh. It's also extremely nutritious-- filled with fiber, antioxidants, vitamins K, C, and important minerals. This is a super yummy, healthy side dish to any meal you make. Let's jump straight to it.



What you'll need:

1 large bulb celery root

A drizzle of avocado oil

A sprinkle of salt and pepper


Preheat oven to 425F

Peel and chop celery root into wedges

Place celery root wedges into a medium bowl, drizzle with avocado oil and sprinkle with salt and pepper

Use your hands to rub the oil, salt, and pepper into the celery root so every piece is completely coated

Place on parchment or silicone lined baking sheet

Place baking sheet in oven on middle rack

Bake for 30 mins, until slightly browned, flipping the celery root and rotating the baking sheet halfway between
